St Clements Cheesecake


A yummy Cheesecake, perfect for a Sunday Lunch Dessert. I was quite surprised how yummy this turned out, as I was quite sceptical. For instance I normally use Philadelphia cream cheese, however, in this recipe it said to use ricotta cheese, which was a first. although delicious. 


First you will need:

300g Ginger Biscuits

125g Sunflower Spread

1 tbsp Golden Syrup

2 x 250g Tub Ricotta Cheese

3 tbsp Lemon Curd

50g Caster Sugar

Finely Grated Zest and Juice of 1 Orange and 1 Lemon

12g Sachet Powdered Gelatine

200ml Whipping Cream



First off you will need to blitz the Ginger Biscuits, until it turns into crumbs.





Then you will need to place the sunflower spread and syrup into a pan, and stir until it has melted, then add the biscuits crumbs, and mix together.



Once the biscuit mixture has been mixed, it then needs to go into  a 20cm round loose-bottom flan tin. However, I didn't have one of these, so I placed it into a square tin. Then place the tin into the fridge to chill, while you prepare the filling.




To make the filling, you need to place the ricotta, lemon curd and caster sugar into a bowl and beat it together. 




Once it has been beaten, you then fold in the orange and lemon zest





Once that has been mixed together, you then need to pour the orange and lemon juice into a bowl and sprinkle over the gelatine and leave it to stand for about 10 minutes. 

Once 10 minutes is up, place the bowl over a saucepan of simmering water, and heat the mixture gently, until it dissolves. Once it dissolves, beat the mixture into the ricotta mixture.







Then place the whipping cream into bowl and whip until it forms soft peaks.




Once whipped, fold it into the mixture and spoon it on top of your chilled base and level the top will a palate knife.








Once you have placed the mixture on top it then needs to go back into the fridge to chill and set.

You can add decoration to this however, I didn't with mine, as my family did not want the zest on top.

Although if you wish to place decorate on top then you will need:

2 Oranges, Peeled and Segmented

Orange and Lemon Zest Caster Sugar


First you need to arrange the orange segments on top to how you would like, you can place them into a pattern or just simple sprinkle then on. 

Toss the orange and lemon zest with the caster sugar and sprinkle them all over.

That is your decoration, just to give it a bit of colour if you like, or you can have it like I did, nice and simple.
